It’s that time of year when the only thing that seems to cool you down on a hot day (and satisfy your sweet craving at the same time) is ice cream. When I was younger, Sunday afternoons at my Grandparents during the summer would always inevitably mean boxed ice cream sandwiches for dessert. You know, the supermarket ones with the wafers on the outside?
I didn’t really like them and truth be told, I’m not a big ice cream fan. When it comes to dessert, I’ll always choose a cake or cookies (or just plain old cookie sandwiches) over ice cream.
But the days of the humble store-bought ice cream sandwiches are long gone. These days, all the “cool” (sorry, couldn’t help it) kids are making their own delicious gourmet ice cream sandwiches and sometimes creating their own ice cream to wedge in the middle. These days, I’m much more likely to jump on the bandwagon of ice cream sandwiches, with not a pink wafer in sight.
